Mango Oat Breakfast Bars

+ 2 large mangos, peeled, pitted and puréed
+ 1/2 c. brown sugar + 6 Tbsp. butter, softened + 1 egg + 1 tsp. vanilla + 3/4 c. rolled oats + 2/3 c. flour + 1/4 c. oat bran + 3/4 tsp. baking powder + 3/4 tsp. ground cinnamon + 1/4 tsp. salt + 2/3 c. chopped walnuts What to do:
1. Place puréed mango in a medium saucepan. Simmer over medium-low heat for about 25 min., stirring frequently, until excess liquid has cooked off and mixture is very thick but is still moist.
2. Preheat oven to 375°F and spray an 8-in. square baking dish with non-stick cooking spray. 3. Beat together brown sugar and butter in a medium bowl. Add egg and vanilla and mix until smooth. Stir in oats, flour, oat bran, baking powder, cinnamon and salt. Spread into prepared pan, then spread mango mixture over top; sprinkle with walnuts. 4. Bake for 30 min.
