Caribbean Grilled Catfish with Tropical Fruit Salsa

Steamed garden fresh vegetables. Prep Time: 15 Min. Cook Time: 6 Min. What you need:

+ 1 tsp. minced garlic
+ 1/2 tsp. salt + 1/2 tsp. ground black pepper + 1/4 tsp. ground red pepper + 4 catfish fillets (about 6 oz. each) + 2 tsp. olive oil Tropical Fruit Salsa: + 2 c. mango and/or papaya + 2 Tbsp. chopped cilantro + 1 Tbsp. EACH jalapeno pepper and minced green onions OR chopped chives + 2 Tbsp. fresh lime juice + 1 Tbsp. honey What to do:
1. Preheat grill or broiler.
2. In a small bowl, combine garlic, salt and black and red peppers. Brush one side of each fish fillet with 1/2 tsp. olive oil and sprinkle with spice mixture. 3. Grill or broil on a rack 4 inches from heat source for 4 to 6 min. or until the fish is cooked through. Serve with Tropical Fruit Salsa; if desired, garnish with chives. Tropical Fruit Salsa: 1. In a small bowl, combine 2 c. each mango and/or papaya, 2 Tbsp. chopped cilantro, 1 Tbsp. each jalapeņo and minced green onion or chives; stir in 2 Tbsp. lime juice and 1 Tbsp. honey. YIELDS: About 2 c. TIP: You may also purchase prepared tropical salsa instead of making it. Nutritional information:
