Festive Wisconsin Cheddar Frittata

What you need:

+ 6 large eggs
+ 1 c. fresh spinach, cut into strips
+ 2 green onions, thinly sliced
+ 1 Tbsp. unsalted Wisconsin butter
+ 1/4 c. fresh red bell pepper, diced
+ 2 oz. (1/2 c.) Wisconsin cheddar cheese, shredded
+ salt and pepper to taste
What to do:
1. Set oven to broil. Beat eggs in a medium bowl. Add spinach, green onion, salt and pepper to taste.
2. Melt butter over low heat in an oven-proof skillet. Increase heat to medium-high and pour egg and spinach mixture into skillet to taste. Stir gently. When the egg mixture is half set, top the surface of it with Wisconsin Cheddar cheese and bell peppers.
3. Place the skillet under the broiler and heat until cheese melts and the egg mixture is cooked. Serve immediately.
