+ 2 lb. beef chuck or round steaks, cut 1/4-1/2-in. thick
+ chopped fresh cilantro (optional) Marinade: + 3 Tbsp. paprika + 3 Tbsp. fresh lime juice + 3 Tbsp. white vinegar + 3 Tbsp. vegetable oil + 2 Tbsp. chili powder + 2 cloves garlic, minced + 1-1/2 tsp. ground cumin + 1-1/2 tsp. salt + 1 tsp. onion powder + 1/2 tsp. pepper What to do:
1. Combine Marinade ingredients in large nonreactive bowl. Place beef steak and marinade in food -safe plastic bag; turn steak to coat. Close bag securely and marinate in refrigerator 6 hr. or as long as overnight, turning occasionally.
2. Remove steak from marinade; discard marinade. Place steaks on grid over medium, ash-covered coals. Grill, covered, 5-8 Min. (over medium heat on preheated gas grill, 4-7 Min.) for medium rare (145°F) to doneness, turning once. Carve steak across the grain into thin slices.
