Italian-Style Waldorf Salad with Garden Pasta

What you need:

* 1pkg. (12 oz.) tricolor penne pasta
* 1 jar (15 oz.) ClassicoŽ Light Creamy Alfredo Pasta Sauce, or about 2 c.
* 6 Tbsp. frozen lemonade concentrate, thawed
* 2 medium red delicious apples, diced, or about 3 c.
* 1 medium Granny Smith apple, diced, or about 1-1/2 c.
* 2 c. diced Fontina cheese
* 1-1/2 c. thinly sliced celery
* 1-1/2 c. halved red seedless grapes
* 1 c. dried cranberries

What to do:

1. Cook pasta according to pkg. instructions. Rinse with cold water and drain.
2. In a large bowl, whisk together Pasta Sauce and lemonade. Season with salt and pepper to taste if desired. Stir in cooked pasta, apples, cheese, celery, grapes and cranberries, and toss until well coated. Cover and refrigerate for 30 to 60 min., or until ready to serve. Garnish with fresh arugula leaves and toasted pine nuts if desired.

* TIP: If desired, substitute diced Fontina cheese with diced Fontinella or Asiago cheese.

TIP: If desired, add chopped cooked chicken or ham.
