* 3 c. Texas Rio Star Grapefruit sections
* 4 Tbsp. Texas Rio Star Grapefruit juice (reserved from sectioning)
* 36 vanilla wafers
* 2 (8 oz.) pkgs. of cream cheese, softened
* 3/4 c. sugar
* 2 eggs
* 2 c. strawberry glaze
* 36 paper muffin cup liners
* whipped cream
1. Place paper liners in muffin tins. Put 1 vanilla wafer in each. Combine cream cheese, sugar, eggs, and grapefruit juice and beat until smooth and creamy.
2. Fill each muffin cup half full. Bake at 350° for 15-20 min. Cool thoroughly.
3. Gently fold grapefruit sections and strawberry glaze together. Top each cheesecake with grapefruit mixture and chill. Serve with whipped cream if desired.
