* 2 lbs. boneless pork loin
* 1 whole scallion, chopped
* 2 tsp. fresh ginger, finely chopped
* 3 Tbsp. soy sauce
* 2 1/2 Tbsp. hoisin sauce
* 1/2 c. dry sherry
* 8 drops red food coloring
* 1 tsp. sesame oil
* 1 Tbsp. honey
1. Cut pork into 1-in. chunks. Lightly spray the inside of slow cooker bowl with cooking spray.
2. Place all ingredients in slow cooker and toss to mix and coat well. Cover and cook on low for 7-8 hr. Serve over rice or with fried rice and hot mustard.
