Carbonara Smoked Fish and Tagliatelle

What you need:

+ 1 lb. smoked cod or haddock fillet, skinned and cubed
+ 1 - 10 oz. jar carbonara sauce
+ 2 Tbsp. whole grain mustard
+ 1 Tbsp. olive oil
+ 4 oz. mushrooms, sliced
+ 3 green onions, chopped
+ 4 cherry tomatoes, quartered
+ 9 oz. pkg. fresh tagliatelle
+ 2 Tbsp. parsley, chopped
+ black pepper, to taste
What to do:
1. Heat the carbonara sauce in a pan for 3-4 min. Add the cubed fish and mustard. Cook for 6-8 min.
2. Cook the tagliatelle according to the pkg. instructions.
3. Meanwhile, heat oil in a large pan. Add mushrooms and green onions. Cook 3-4 min. Add tomatoes, cooked tagliatelle, fish and sauce mixture, salt and pepper and stir to combine.
4. Serve immediately. Garnish with fresh chopped parsley.
